Coconut-onion-tomato sauce goes quite well with potato gnocchi. Good as a sandwich spread too!
Ingredients:
  • 1 pack Potato Gnoccis (approx 1 lb ::: or pasta of choice)
  • 1 can coconut milk
  • 2 sun-dried tomato halves (soaked overnight in 1/4 cup water)
  • 1 yellow or white onion
  • 1 tomato
  • handful mallow leaves
  • 2 TBS butter
  • 1/2 Tsp salt
  • 1/4 Tsp Pepper

Ingredients:

  • handful mallow leaves

  • Pepper - 1/4 tsp?

Instructions:
1) Melt butter in pan over low medium heat. Chop onion small, cook in pan until soft and translucent.
2) While onion cooks, in blender combine: coconut milk, sun-dried tomatoes (+water), salt and pepper.
3) Chop tomato and mallow and set aside.
4) Boil water for gnoccis/pasta and cook.
5) Add cooked onions to blender - blend sauce mixture well.
6) Cook chopped tomato and mallow in remaining butter, just a minute until the mallow is softened.
7) add it all together: Gnoccis + tomato/mallow + coconutty sauce = Yummy =)
